Win Valentine’s Day With These Banana Split Pancakes

Here is a healthy breakfast in bed for those fit couples out there wanting something a little but naughty but still really nice! These banana split pancakes are gluten free, dairy free and refined sugar free, and packed with flavour and good vibes to start your Valentines Day!

Ingredients

2 Bananas, 1 mashed, 1 sliced 

4 Eggs 

1 Large Scoop Protein Powder 

4 Strawberries, sliced 

2 tablespoons coconut yogurt  

2 tablespoons 90% raw cacao dark chocolate, melted 

1 tablespoons coconut oil, for frying 

Method

  1. In a bowl combine the mashed banana, protein powder and eggs. Either using a fork, whisk or stick blender, mix your ingredients until well combined.

  2. Heat your pan over a medium to high heat and grease well with the coconut oil. Pour your batter into the pan to make your desired sized pancakes, and cook until firm around the edges,. And starting to bubble, 2-3 minutes.

  3. Once firm enough to flip, use a spatula to turn over and continue cooking on the other side for 1-2 minutes or until cooked through.

  4. Serve on a plate topped with sliced banana, strawberries, dollops of coconut yogurt and drizzled with the dark chocolate. Enjoy.
